This summer has been great for northern Europe. Since I've been living in the Netherlands (which is now almost 8 years) I have never seen so many sunny days in a row in this country! This called for many summery drinks such as this one I originally found on Sasha's Instagram page

The drink is a a fruity and sweet nod to tropical drinks with ingredients you could typically find in a piña colada. The addition of velvet falernum makes for a nice touch and the colour given by the blue Curaçao syrup is stunning too. It will taste better if sipped by the pool!


- 2 oz / 60 ml Light rum
- 0.5 oz / 15 ml Blue curaçao syrup
- 0.5 oz / 15 ml Velvet falernum
- 1 oz / 30 ml Coconut cream
- 2 oz / 60 ml Pineapple juice
- 2 Pineapple pieces
- 1 Maraschino cherry


Shake all liquids with ice until chilled and strain in a highball glass filled with crushed ice. Garnish with the pineapple pieces and the maraschino cherry on a pick.
